Green lentil curry

Creamy green lentil & mushroom curry

Try this delicious creamy green lentil and mushroom curry made from predominantly tinned ingredients. 


  • Tinned green lentils 
  • Tinned mushrooms 
  • Tinned coconut milk 
  • Tinned chopped tomatoes
  • 2 Onions
  • 3-4 tablespoons curry paste
  • Vegetable stock
  • Optional extras: rice, chopped parsley or coriander, nan bread
Green lentil curry


  1. Peel and dice your onions and slice your mushrooms into halves.

  2. Heat some oil on a pan and add your onions, stir until they begin to brown. Add your mushrooms and cook for around 5-6 minutes.

  3. Add in your curry paste and stir for 1-2 minutes. Then, add lentils, vegetable stock and your coconut milk. 

  4. Bring to the boil, then cover and leave to simmer. Cook for 30-40 minutes until your lentils are cooked. 

  5. Serve with your side of choice, we suggest fluffy rice and nan bread.
